Kansas City Welcomes TC’s Fully Loaded: A New Potato Haven

It’s not every day you hear about a restaurant that revolves entirely around baked potatoes, but in Kansas City, the food scene has just taken a delicious twist. Thomas Clark is gearing up to open the doors of his very own establishment, TC’s Fully Loaded, at 1407 Southwest Blvd. on Sunday, October 20. This exciting news comes after five years of serving up some really hefty spuds from his popular food truck.

What’s on the Menu?

Now, let’s get into the meat (or, in this case, potato) of it all. If you love baked potatoes (and let’s be honest, who doesn’t?), you’ll be in for a treat with Clark’s unique offerings. Take for example the Mr. Krabz potato. This magnificent spud, priced at $24, isn’t holding back — it’s stuffed with crab, shrimp, green onions, and drizzled with creamy Cajun sauce. Food enthusiasts will also enjoy the KC potato for $18, laden with burnt ends, cheddar cheese, barbecue sauce, green onions, and a side of sour cream. There’s even more to feast on with options featuring crawfish, broccoli and cheddar cheese, and a whole lot of Southern flair.

A Journey from Foodie to Food Truck Owner

Believe it or not, starting a restaurant was never on Thomas Clark’s life to-do list. “I’m more of a foodie, I would say. I just got into the restaurant business,” he admitted, revealing that he enjoys eating much more than cooking. Originally from Alabama, he moved to Kansas City for a job post-college and noticed a shocking absence of baked potatoes. “Back home, all the barbecue joints have baked potatoes you can get,” he chuckled, reflecting on how he started making them at home. What began as dinner for himself and friends soon grew into something much bigger, as the word spread about his culinary knack for crafting delicious baked potatoes.

From Bus Stops to Food Trucks

As his reputation soared, so did the demand for those loaded taters. Customers reached out on social media to place orders, and Clark was quick to meet them at bus stops along 27th Street and Troost Avenue. Things really took off when he invested in a food truck a couple of years ago, allowing him to participate in community events and the famous First Friday, which he claims is the “best day of the month”. It was a hit! Not only did people enjoy his delicious offerings, but food reviewers took note, showcasing his food on social media and drawing even more attention.

What’s Next?

As he prepares to transition into his brick-and-mortar location, fans of TC’s Fully Loaded can expect a similar menu at both the food truck and restaurant to start. The restaurant will operate from 5 to 9 p.m. on Thursdays through Sundays, while the food truck will still handle lunch and other events. Plans for the Future

Though he has huge dreams of expanding TC’s Fully Loaded into other major cities like New York, Los Angeles, and Houston, for now, Kansas City is his focus. Clark is also considering introducing non-potato items in the future — perhaps some crab cakes will be on the way! Regardless of where he goes, his passion lies in building connections with customers. “Serving the community is really fun,” he shared. “Trading food with other food trucks, talking to customers … It is rewarding.”
