Meet Victor Esqueda, the proud co-owner of Ixtapa Fine Mexican Cuisine. This spirited entrepreneur made the long journey from Guadalajara, Mexico, to Kansas City three decades ago. Right from the start, he soon realized how much he missed the traditional dishes of his homeland. “The real Mexican food that will be lean, light, and full of flavor,” he explains with enthusiasm. Esqueda noticed that many local restaurants were falling short, often serving up greasy, cheesy, and heavily fried versions of what he knew as authentic Mexican cuisine.
Motivated by both passion and nostalgia, Esqueda decided to fulfill his dream by starting his own restaurant. Ixtapa Fine Mexican Cuisine was established with a mission—not only to provide locals with genuine Mexican flavors but also to boost the Latino community by creating job opportunities and support.
Esqueda’s dedication shines through when customers rave about his food. He shares with a chuckle, “It’s so funny when people have told us, ‘Oh, my God, you have the best Mexican restaurants in town.’ And I say, ‘No, we don’t have the best. We have the only ones.’” His commitment to authenticity is palpable, but like many small business owners, he has faced hurdles along the way.
Esqueda is open about the struggles he faces at his Overland Park location. Despite the incredible reviews he receives, he admits, “What we need is more customers.” High taxes and rising operational costs have taken a toll, yet he remains hopeful and passionate about sharing his heritage through food.
This past month, the atmosphere in Kansas City was buzzing with pride, especially during the recent U.S. Hispanic Chamber of Commerce convention. Event chair Jackie Puente highlighted the vibrant Hispanic community that is deeply woven into the fabric of the city. “Kansas City has an amazing Hispanic community, an amazing number of Hispanic business leaders,” she said, underscoring the incredible power of entrepreneurship within the Latino culture.
Esqueda embodies that entrepreneurial spirit, eager to contribute to the local landscape of businesses. He passionately declares, “Let me give you the opportunity to show you what is our culture.” His drive to educate others about the richness of Mexican heritage through cuisine is commendable.
