Exciting New Street Food Spot Coming to Lenexa

Lenexa is buzzing with excitement as Oscar Romero, the owner of the popular AR’s Breakfast and Brunch, sets the stage for his new venture – Snack Bar. This vibrant and lively addition to the city is a celebration of Mexican street food and is set to open its doors in mid-November.

A Flavorful Shift

Located at 7789 Quivira Road in Lenexa, Snack Bar will take over the space formerly known as Papagallo Gyro Cafe, which recently closed after being a part of the community for around four years. While AR’s Breakfast and Brunch has won hearts with its unique horchata waffles and chorizo bowls, Snack Bar will bring an entirely new flavor profile to the table.

Oscar has partnered with Norberto Romero to bring this vision to life. Though they share the same last name, they’re not related. Drawing from a rich heritage of street vending, Oscar shared, “My family has always been street vendors in Houston. If they’ve done that for years, we can open a street vending business, an actual legit spot…” This connection to street food is deep-rooted for both partners; Norberto’s sister was a street vendor in Mexico, selling delicious shaved ice.

A Taste of Mexico

The Snack Bar menu promises to be a tasty journey through Mexican culture. Customers will be able to enjoy a variety of exciting dishes, including:

  • Agua Frescas – refreshing fruit drinks
  • Paletas – Mexican ice cream bars that come in a variety of flavors
  • Elote – delicious Mexican street corn, a favorite among locals
  • Tortas – Mexican sandwiches packed with flavor

Additionally, Oscar and Norberto plan to serve micheladas, a beloved Mexican drink that combines beer with lime juice, tomato juice, and hot sauce, perfect for those looking for something refreshing with a kick!

Grab and Go Convenience

While the location will feature some seating for customers who wish to dine in, the primary concept behind Snack Bar will be grab and go. This setup caters perfectly to the busy lives of Lenexa residents, allowing them to enjoy delicious street food without delay. Oscar noted, “We want to make it convenient for people to stop by and grab something tasty on the way to work or while running errands.”

The Journey So Far

Oscar’s journey began when he opened AR’s Breakfast and Brunch in June of the previous year, at 8021 Metcalf Ave. in Overland Park. His innovative approach to brunch with a Mexican twist drew large crowds right from the get-go, with lines often out the door. The success was undeniable, and just a month and a half later, Oscar recognized the need for a bigger space, which led to an expansion into Olathe at 105 S. Clairborne Road.

The momentum is certainly in Oscar’s favor, as he transitions from breakfast to street food. With Snack Bar, he hopes to tap into the authenticity and love for street food that resonates with many in the community, bringing a slice of Mexico’s culinary tradition to Lenexa.
